-Bettie Cooper (VGXB82A) 3 c Bread flour 2 2/3 tb Sugar 1 1/3 ts Salt 1 1/3 tb Butter (I use canola oil) 2/3 c Raisins (I add a few more) 2 2/3 tb Caraway seeds 1 1/3 ts Baking soda 1 1/3 c Buttermilk 2 ts Dry yeast One thing I learned from reading the Electric Bread book is that you can stop your machine after the first rise and start over again and get a nicer loaf. 1 c Mashed potato 2 c Flour 1 ts Salt 1 Tbpp baking powder 2 Beaten eggs 1 c Milk 4 tb Light corn syrup 1 tb Nutmeg Do not expect these to be like American pancakes, but they have an excellent flavor. 1 1/4 c Pecan pieces 1 T Butter 1/4 t Salt 1 pk Frozen dinner rolls -(Bridgeford or Rich) 2 T Cinnamon 1/2 c Sugar 1/2 c Light brown sugar 1 pk Butterscotch pudding -mix (3 oz.) 1/2 c Butter On a baking sheet, lightly roast pecans (approximately 8 minutes) in a preheated 350 degree oven. While warm, stir in 1 Tablespoon butter and 1/4 teaspoon salt. Spray a bundt pan VERY liberally with non-stick spray. Sprinkle about 1/4 cup pecans in bundt pan. In a small bowl, stir together cinnamon, sugar and brown sugar. Roll each frozen roll in cinnamon-sugar and place in bundt pan. After you have about half of the rolls in the pan, sprinkle with 3/4 remaining pecans. Top with last half of rolls. Sprinkle remaining pecans and butterscotch pudding mix over rolls. Slice butter into 1/2″ cubes and dot cubes around. Cover loosely with waxed paper or plastic and leave on cool spot on counter to rise over night. (It will rise up out of pan.) Preheat oven to 350 degrees and bake for 30 minutes. Permit to cool about 5 minutes in pan, then unmold onto serving platter. |

1/3 c Besan (chick pea) flour 1/4 c Mashed tofu 3/4 c Water 3 -to 4 tb Margarine 2 -to 4 Hot green chilies 1/4 c Cilantro 1 sl Ginger (1/2″) 2 tb Chopped onion 1/2 ts Salt; to taste 4 sl Bread * * (I like sourdough, and I recommend not using a really dark type.) Put everything but the bread and margarine into the blender/food processor/ other implement of destruction and blend until the herbs are medium chooped. Pour the resulting batter into a wide shallow dish. (She says it’ll keep three days covered in the frig, if you plan meals that far ahead. I don’t.) Melt the margarine in a big skillet or frying pan. Soak one slice of bread at a time in the batter until pretty gloppy, then toss into the skillet and fry until the bottom is medium brown, then flip and cook about another minute. 2 tb Curry powder 1 c Onion; finely chopped 2 tb Butter 1 tb Flour 1 c Milk 8 ea Hard cooked eggs; chopped 4 ea Toasted english muffins Fresh cilantro or parsley -chopped Saute onion in butter until soft. Stir in curry and flour and heat an additional 2 mins. Slowly add the milk, stirring constantly as sauce thickens. Add chopped eggs and heat thru. Pour over muffins, garnish with parsley or cilantro and serve. Curry Powder 5T hot dried red chile powder 1/2 t powdered ginger 1/2 t mustard seeds 1/2 T cloves 2 inch stick cinnamon 4 T coriander seeds 4 T cumin seeds 3 T tumeric 1/2 t fenugreek 1/2 t cardamom Mix together and blender in grinder until fine |
