1/2 cup Egg Beaters=AE 99% egg substitute <br />
2 cups 1/2% lowfat buttermilk <br />
1 cup oatmeal -- quick cooking <br />
1 tablespoon molasses <br />
1 tablespoon canola oil <br />
1 cup whole wheat flour <br />
1/2 teaspoon salt <br />
1 teaspoon baking soda <br />
1 teaspoon baking powder <br />
<br />
Combine egg substitute, buttermilk, oatmeal, molasses &#38; oil. Stir in combined dry ingredients. <br />
Waffles: Bake according to waffle maker's directions. <br />
Pancakes: Drop batter by 1/4 cups onto a hot, greased griddle. Turn when bubbles begin to form on top of pancake. Approx. 15 pancakes. <br />

1/2 c brown sugar -- packed <br />
1 tsp baking soda <br />
1/4 tsp salt <br />
2 egg whites -- whipped <br />
1 c buttermilk* -- at room temperature <br />
1 c fat-free sour cream <br />
<br />
Prepare skillet with cooking spray and heat on medium until hot. In a mixing bowl, combine flours, cornmeal, oatmeal, brown sugar, baking soda, and salt. In another mixing bowl, combine egg whites, buttermilk, and sour cream. Mix dry ingredients with wet ingredients just until moistened. Ladle in the batter, using 3 or more tablespoons per cake. Cook for 2 minutes, then flip carefully and cook for 2 minutes more. Repeat with remaining batter. <br />

6 Dried apricot halves; choppe <br />
2 c Water <br />
Recipe by: McDougall Rinse the grains and soak them in water to cover for 30 minutes. Drain. Place the soaked grains in a rice cooker or a saucepan <br />
along with the apricots and 2 cups of water. Cook over low heat until the water is absorbed, about 17 minutes in a saucepan; a rice cooker will shut off automatically. Let rest for 15 minutes before serving. From the collection of Sue Smith, S.Smith34, Uploaded June 16, 1994 <br />

2 Eggs <br />
Self-raising flour Salt and pepper Peel the potatoes and onions and process together to a coarse puree. Do not overprocess - the texture should be a bit rough. Add 2 eggs, beaten, and salt and pepper to taste. Add enough self-raising flour to make a batter with a thick pouring Heat a hotplate or large frying pan, add a little oil and pour in a large ladleful of batter on one side of the pan and another on the other (there probably won't be room for more than two pancakes at a time). Cook on medium heat until the pancakes are golden brown underneath, then turn and cook the other side. Serve with apple sauce (made by stewing sliced granny smith apples with a little water, sugar and lemon juice and stirring from time to time until a soft puree).
